The ritual
Five steps, zero mysticism
Matcha has whisks, cacao has circles. Çaj mali has a stove, a pot, and the patience of whoever’s grandmother taught them. This is the whole ceremony — it happens to be perfect.
- 01Stems, not dust. Two or three whole stems per pot, flowers on. Breaking them is allowed; grinding them is not.
- 02Cold water first. Stems into cold water — half a litre for two. Starting cold pulls the slope out of the plant.
- 03A real simmer. Bring it to the boil and let it murmur for three minutes. Steeping in merely hot water is how hotels ruin it.
- 04The quiet pour. Pour through anything or nothing; the stems settle. The colour should be pale gold, not brown.
- 05Honey, if earned. Mountain honey, one spoon, only after a day that deserves it. A gliko on a plate beside the cup is the full welcome.
