Short answer. Green walnut gliko (gliko arre) requires unlignified green walnuts harvested in early June when the central shell remains entirely soft. The intense bitterness from juglone and soluble polyphenolic tannins is eliminated through a continuous 14-day cold-water bath with multiple daily water changes. The fruit is then briefly firmed in food-grade calcium hydroxide (lime water) to cross-link cell-wall pectins before being slow-simmered in sugar syrup inside copper vessels.

The 10-Day Harvest Window: Preventing Lignification

Green walnut gliko can only be made during a tight 10-day seasonal window in southern Albania, typically between May 28 and June 10. During this phase, the fruit of Juglans regia has reached its full immature size, but the inner woody endocarp (the shell) has not yet begun lignification.

Artisans test each walnut with a thin needle or wooden skewer: if the pin passes effortlessly through the core from stem to tip without meeting grain resistance, the walnut is perfect for gliko.

Eliminating Juglone and Soluble Tannins

Raw unripe walnuts are intensely bitter and astringent due to high concentrations of juglone (5-hydroxy-1,4-naphthalenedione) and hydrolysable tannins. To remove these compounds without destroying the walnut structure, the thin outer peel is pared away, and the walnuts are submerged in a large basin of cold spring water.

For 12 to 14 days, the water is changed 3 to 4 times every 24 hours. The cold water leaches out the dark, astringent polyphenols through osmotic diffusion, turning the walnut core pale and clean.

Calcium Cross-Linking and Copper Pot Simmering

Before cooking, the leached walnuts rest for several hours in a clarified bath of calcium hydroxide (traditional lime water). Calcium ions (Ca2+) bond with pectin chains in the walnut cell walls, forming a resilient calcium pectate network that keeps the walnut crisp and whole through hours of simmering.

Finally, the walnuts are simmered in heavy copper basins with simple sugar syrup, wild mountain honey, and a hint of clove or lemon zest. The high thermal conductivity of copper ensures uniform heat distribution, preventing scorching and yielding a translucent, dark-amber masterwork.
