Watermelon gliko (gliko me shalqi) is perhaps Përmet’s most surprising craft tradition. Artisans take the firm, pale inner rind of high-summer watermelons, cut them into jewel-like cubes, and simmer them slowly until they turn translucent as sea glass. It offers a wonderfully crisp texture and a clean, light sweetness that cleanses the palate and delights everyone who tastes it for the first time.
